Espresso

Espresso is a coffee beverage originating from Italy. Its name comes from the words "quick" and "pressure," because espresso is made by forcing water through coffee grounds under pressure in a short time.

True Italian espresso is made from 7 g of ground coffee, pressed by water at 8-10 bars of pressure and a temperature of 88-90 °C. It flows for about 25 seconds and contains 30 ml of liquid. The surface has a hazelnut-colored crema about 1–2 mm thick, known in Czech as "crema."

A darker crema color means too high pressure, often caused by excessive manual tamping of the coffee in the filter, resulting in a burnt taste. Maintaining correct pressure, temperature, and time is important for proper extraction. Common mistakes occur with preparation time and volume. Proper espresso contains only 20–30 ml of liquid, which looks like a small amount in a cup, and often there is a tendency to let the coffee flow longer, leading to a bad taste.

For a larger volume, coffee can be diluted with hot water (americano – diluted coffee) or prepared using two to three doses (14 g or 21 g) in a larger filter. The coffee remains equally strong but more in quantity.
